Is there anyway to get a cell to display CCF (c) as CCF (c) rather than
CCF (copyright symbol)

change it there

If you never want the copyright symbol (in any Office application) then do as Ivan says. Otherwise ...

It's a little awkward but
(a) You can type CCF[space](c)[space] and then press Ctrl-Z to undo the AutoCorrect, then press Enter or whatever to get out of edit mode, or ...
(b) You can type CCF[space]c) and then go back and edit and add the left parenthesis (because the AutoCorrect only happens when you do something at the end of it)
