Hello,
Is there way to change the font of all text in type 'Normal' but leave the text set to 'Header1' unchanged?

Yes.

They are two different styles.

Change Normal.
Do not change Heading 1

Except for....Heading is "based on" Normal.

Which is why serious Word users never use Normal.

Practically speaking, if you insist, you can change Normal, then go into Heading 1 and explicitly change the format (back) to what was.

Or you could not use Normal, or Heading 1.

I don't. I do not ever use either of them. All my headings are custom styles.

You can actually use find & replace to change everything in one style to another, or to change the font of everything in a particular style.

In the find & replace dialog, select the 'find what' box (but don't type anything in it) then click the 'more' button and the 'format' button. Select 'style' and choose the style you want to search for. Now click in the 'replace with' box and click the 'format' button again - choose either a font or a style. When you click 'replace all' it will change everything in your first chosen style to your second style or font.
