One of the people using my App in v2007 can view the worksheets as .pdfs using the 'Acrobat' menu. I don't have this menu on my version.

Is there a way of stopping the worksheets from being seen this way?

You can make a worksheet hidden, using Excel, or you can make it very hidden, from the VBIDE.

I don't have an Acrobat menu either, sounds like an expensive addon, but I suggest you at least try to make it very hidden.
