Formula Help

I have a list of products made during the last twelve months on a daily basis (see test data below). If there is a bank holiday or weekend then the volume would be nill.

I need to be able to setup a formula that will look at those days with volumes greater than zero and provide me with a number (the optimum capacity) that would meet 90% of all the days capacity.

Can anyone help?

Where are the bank holidays defined?
