I have a word document containing a form

How do I password protect just part of the form? say bookmark Text1?

You can do so by using Continuous Section breaks. Under Tools > Protect document there is a little dialog (selecting Forms) that allows you to choose which section to protect (or not).

I must point out that while technically Text1 IS a bookmark, it is the default name for a formfield.
