Extracting Data from a PLC

I have been given the task of Data-Logging from a Mitsubishi FX3U PLC. The PLC is connected to the LAN via an ethernet card.

My task is to collect data of a moulding process (recipe settings, 3 burner temperatures and tilting/rotating angles) for each product made and store them in an excel sheet for viewing (prototype reader attached) by the supervisor.

Before I start to go down many wrong roads has anyone done something similar or can someone please give me some guidance as the best route to take to acheive this?
