Is there a way to change the name of the tab that is created for Office??

AFAIK you need to use the new formats for getting Tabs from 2007 on (via programming in XML) - everything (commandbar or menu) from a pre-2007 format will only be displayed in the tab Add-In. Maybe have a look at Change the Ribbon in Excel 2007 or Excel 2010 for a start.
