When I open my Excel 2021 file using a shortcut link to the xlsx file, it opens correctly.
When I open the file by double clicking on the actual xlsx file, all the cells are enlarged.
Same file just different ways of opening it.
Excel spreadsheet looks different depending on how I open the file.

Did you by any chance have it a different view styles when creating the short cut link and last save?
